Planetary Pasta Primavera
A light pasta dish with fresh vegetables and a garlic-lemon sauce, perfect for a comforting yet healthy meal.
Ingredients
- 1 cup whole wheat pasta
- 1/4 cup cherry tomatoes, halved
- 1/4 cup zucchini, sliced
- 1/4 cup bell pepper, sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tbsp Parmesan cheese
- Salt and pepper to taste
Directions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add cherry tomatoes, zucchini, and bell pepper, cooking for 5-6 minutes until tender.
- Add the cooked pasta to the skillet and toss everything together.
- Sprinkle with Parmesan cheese, season with salt and pepper, and serve your fresh, vibrant dish!
