Planetary Pasta Primavera

A light pasta dish with fresh vegetables and a garlic-lemon sauce, perfect for a comforting yet healthy meal.

Ingredients

  • 1 cup whole wheat pasta
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup zucchini, sliced
  • 1/4 cup bell pepper, sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add cherry tomatoes, zucchini, and bell pepper, cooking for 5-6 minutes until tender.
  5. Add the cooked pasta to the skillet and toss everything together.
  6. Sprinkle with Parmesan cheese, season with salt and pepper, and serve your fresh, vibrant dish!
